Mutton Briyani Recipe

Ingredients

  • 1/2 Kg Mutton or more
  • 600 Gms Basmati Rice
  • Chilli Powder
  • Turmeric Powder
  • Cinnamom sticks
  • Cloves
  • Cardamom
  • Coconut Milk
  • Onions
  • Tomatos
  • Green Chillies
  • Ginger & Garlic Paste
  • Mint & Coriander Leaves
  • Oil/Ghee
  • Salt

Step 1 Wash and soak 3 glasses of Basmati rice in water for atleast 30 minutes. Cook 1/2 Kg Mutton in a cooker for 10 minutes (after 1 whistle in sim) along with 1 spoon of plain Chilli powder, Turmeric and Salt each.

Step 2  Heat 2 table spoons of Oil in a cooker. And add 4 Cinnamon sticks, Cloves and Cardamom each. Then add 4/5 Onions and saute them nicely. Add Ginger (4 -5 inches long) and Garlic (about 10-12) paste. After the raw smell goes add 5 Tomatos and saute them well. Add 10 Green Chillies and add them, keep stirring continously. Add 2 spoons of Salt.

Step 3 Add the cooked Mutton and saute well. Then add a bunch of Mint and Coriander leaves. Add another 1/4 – 1/2 spoon of plain Chilli powder. Extract thick milk from 1/2 Coconut. Now add the water in which the Mutton had been cooked along with the Coconut milk, so that put together they equal 4 1/2 glasses. If less add sufficient water.

Step 4 Strain the water and add the soaked rice. Now add 2 spoons of Ghee on top and close the lid. When the steam comes put the weight and leave it in full sim for 10 minutes. Open after 20 minutes and gently turn the rice from below, without breaking the rice.

Serve hot with Onion Raitha and/or Boiled Eggs.

TIPS

  • You can also marinate the Mutton in half a glass of Curd along with the spices in Step 1. The Curd makes the Mutton soft.
  • Squeeze the juice of 1 Lemon when you soak the Basmati rice, as it will make the rice loose and non-sticky.
